Japan's First and Only Farm-to-Bottle Distillery
The Iiyama Mountain Farm Distillery is the
most talked about secret in Japanese whisky, situated among the stunning
scenery of Iiyama in Nagano Prefecture.
Owned by Kiyokawa, the distillery embodies the
pioneering concept of "Farm to Bottle," a rarity in Japan's whisky
tradition. Its location and challenging climate, the distillery's journey
to self-sufficiency faced many hurdles, including harsh winters and snowfall.
However, their persistence led to the development of a specialized barley
hybrid that is resistant to environmental conditions.

POTSTILLS
With a pioneering spirit, they installed
cutting-edge 5,000L potstills, including a unique Italian import, poised to
craft an array of exceptional spirits. Notably, their innovative approach
extends to maturation, exploring unconventional cask types such as bourbon
seasoned with orange liqueur. -
BOTTLING & LABELS
The distillery embraces an
artistic touch with washi paper labels, and even plans to establish a paper
production plant on-site for personalized bottlings. -
